What We’ll Do

Forget the oversized dills, India's culinary culture has a rich and delicious pickling culture all its own. Join Gastro Obscura and Brooklyn Delhi as we dig into the unique flavors and vibrant spices of Indian pickling, and discover how you can start pickling at home!

During this live one-hour digital experience we'll be joined by Chitra Agrawal, author of Vibrant India: Fresh Vegetarian Recipes from Bangalore to Brooklyn, and co-founder of Brooklyn Delhi, who will walk us through the history of pickles originating from South Asia. We'll investigate the different varieties, regionality, ingredients and spices used and how they're eaten. Then Chitra will demonstrate how to prepare traditional lime pickle.

Whether you want to just watch along and learn about an unsung corner of the culinary world, or you want to pickle along with Chitra, join us for an exciting look at South Asian flavor!

INGREDIENT LIST (If you would like to work along with Chitra)

- 6 Limes 
- Salt (non-iodized)
- Turmeric powder
- Cayenne powder or red Indian chili powder
- Fenugreek seeds
- Asafetida
- Black mustard seeds
- High heat mild oil such as sunflower or canola
- Extra 1/2 cup lemon or lime juice

Chitra Agrawal is the co-founder of Brooklyn Delhi, a small batch Indian sauce and condiment company inspired by her heritage. Chitra's first product to market in 2014 was her achaar or Indian pickle, which is now the only American-made achaar sold widely in US grocery stores including at Whole Foods nationwide. She is the author of Vibrant India: Fresh Vegetarian Recipes from Bangalore to Brooklyn (Penguin, 2017). Chitra has specialized in teaching, serving and writing about vegetarian food rooted in her family’s recipes from India for over a decade. Her work and products have been featured in The New York Times, Saveur, Food & Wine and more.
