Join us in one of the most enchanting corners of the Hudson Valley for an immersive exploration of the burgeoning botanical scene and the people making it blossom. Over the course of three days, we’ll forage alongside a seasoned expert, take a tincture-making course from a local apothecary, and learn the art of arranging botanicals with our guide, a professional floral designer. Along the way, we’ll use all of our senses to learn about local ecosystems—from taking in the fragrance of a sustainable flower farm to digging into a plant-based, fire-roasted feast.
Arrive and take some time to settle into our cozy accommodations tucked away in the forest of Phoenicia before joining the group for a botanical cocktail making workshop (and aperitif) and a plant-based welcome dinner roasted over open fire pits.

After a fresh, locally harvested breakfast, we’ll embark on a foraging and plant-identification adventure with a seasoned forager. Drawing on the treasures we collected, we’ll tuck into a foraged picnic lunch and sip on some naturally garnished cocktails. After lunch, we'll be joined by an experienced apothecary to learn about plant medicine. We’ll learn how to apply medicinal herbs to everyday life, creating our own tinctures to take home with us. The rest of the evening is free for you to relax or to continue exploring the bucolic beauty of the Hudson Valley.

Rise and shine with another fresh locally sourced breakfast at the Graham + Co. This morning we'll be heading to a small local flower farm to learn the fundamentals of sustainably growing flowers for market. We'll harvest stems directly from the farm and be guided by an on-site floral design workshop under the trees led by our guide (Sylvia of Cape Lily). After a festive final meal of locally sourced food, we'll bid our floral friends adieu and journey on to our next adventure.

The Graham + Co is a small hotel located on three acres of private land in Phoenicia, New York. You'll have full access to the swimming pool, hammocks, badminton court, fire pit, picnic area, and bikes, which you can use to explore the grounds.
The cost of this trip is based on double occupancy, in bunkhouse rooms that include single bunk beds and air conditioning with access to three shared common bathrooms. The Graham + Co offers a variety of upgraded lodging options, subject to availability, outlined below.
Standard Single: Cozy single rooms offer a modern and warm atmosphere. Each room includes a queen bed, private bath, and Tivoli radio. $90 per person (double occupancy), $320 per person (single occupancy).
Standard Double: Spacious double rooms include two queen beds, private bath, and Tivoli radio. $130 per person (double occupancy).
The cost of this trip is $1620, based on double occupancy in bunkhouse rooms that include single bunk beds and air conditioning with access to three shared common bathrooms.
You’re in good company. Solo travelers typically make up about half of our small groups. With curiosity at the core of our experiences, there's a natural camaraderie that develops over the course of a trip. We have two options for you:
Have your own room, subject to availability, for a supplemental cost. You can book a private bunk-room for an additional $150, or a private standard single for an additional $320. After booking your trip, please request a single room and any room upgrades you'd like when you fill out your traveler information form, and we’ll add the charge to your final balance.
We recommend you arrive in Phoenicia by 3 pm on Day 1. Our trip concludes in the afternoon on Day 3 and we recommend departing early that evening.
Travelers should feel comfortable walking two to four miles over the course of each day, spending time in nature, remaining on their feet for long periods of time, and sometimes walking on uneven terrain.
Most dietary restrictions can be accommodated, though in most cases ingredients can't be substituted or omitted from particular dishes. If you have a severe allergy, please contact us to find out if this is the right trip for you. Please note that all meals on this trip are plant-based.
