Valerie Kathawala is a writer focused on the wines of Germany, Austria, and northern Italy, with a particular interest in biodynamics. Essential to her understanding of wine is its cultural and historical context, most critically: food. Her ingredient obsessions range from Styrian pumpkinseed oil to the apricot Knoedel of the Wachau. She will go any distance for monastic breads, August figs, and mountain cheeses.
